How to choose bamboo shoots:
- Fresh bamboo shoots: Choose bamboo shoots that are naturally light green or off-white, avoiding those with unusually dark yellow or pure white colors; select straight shoots with evenly spaced nodes, not too long, firm to the touch, with thin, crisp skin, and not wilted; choose fresh bamboo shoots with a characteristic aroma, absolutely do not use those with a pungent or strange chemical smell.
- Dried bamboo shoots: Choose dried bamboo shoots that are amber yellow or light brown in color, with a slightly glossy surface, thick pieces, short segments, minimal fiber, and feel dry to the touch, free from mold or dark spots.
How to prepare bamboo shoots:
- Peel and slice.
- Soak bamboo shoots in salt water or rice water for at least 2 hours.
- Boil the bamboo shoots at least 2-3 times; this is the most important step. While boiling, leave the lid open so that the cyanide toxins in the bamboo shoots can escape with the steam.
- After each boiling, rinse thoroughly with cold water until the water is clear before using the remaining water to prepare the dish.
